GARLIC CAULIFLOWER “MASHED POTATOES”

Super easy, healthy, low-carb mashed potato substitute.

Ingredients

  • 1 large head organic cauliflower
  • 5 large cloves organic garlic
  • Salt
  • 2 tablespoons grassfed butter
  • ¼ teaspoon freshly ground organic nutmeg
  • Freshly ground black pepper to taste

Method

1.  Set steamer in larger pot.  Fill water to just below steamer.  Heat water to boiling.

2.  While waiting for water to boil, trim and wash cauliflower.  Cut into large chunks.  Chop garlic cloves into chunks.  

3.  Place half of cauliflower on steamer.  Salt.  Place the rest of the cauliflower in, add more salt.  Steam for approximately 10 minutes -- until very soft.

4. Drain cauliflower and garlic. Add to food processor.  Add butter, pepper, and nutmeg.  

5.  Process until smooth.  Remainder may be saved and reheated in microwave.
