Nena's Brown Rice Salad

Ingredients

  • 1 cup of cooked Brown rice
  • ¼ cup of mung beans sprouts
  • ¼ cup of shredded red cabbage
  • ¼ of a medium yellow bell pepper
  • 1 whole green onion cut into thin slice
  • ¼ cup of slice almond (optional and wonderful)

For dressing

  • ½ of teaspoon of olive oil
  • 1 garlic cloves minced
  • ¼ teaspoon of turmeric
  • ½ of an orange (juice only)
  • 1 lemon (juice only)
  • Salt to taste

Method

  • Dressing: In a bowl combine all of the ingredients and whisk really good  
  • Salad: In a bowl add the rice and add the rest of ingredients, then add the dressing and mix all together. Or you can just add the dressing to the rice and then add the vegetables.

Suggestion
You can add hemp seed to increase the amount of protein to make it a complete meal.  When you eat brown rice you need to add greens to slow down the sugar spike.
