Nena's Cauliflower Soup

Ingredients

  • ½ of a small cauliflower
  • 1 medium-sized zucchini
  • ½ of a yellow onion
  • 3 garlic cloves
  • 1 cup of raw almond milk
  • 1tsp of *Herbamare Seasoning
  • 1tsp of Spice Hunter Mexican Seasoning
  • 1 /2 cup of water

Instructions

  • Pull apart the cauliflower and wash thoroughly.
  • Roughly chop the onion.
  • Cut garlic in half.
  • Slice zucchini in quarters.
  • In a medium pot add all of the ingredients and cook over medium heat for approximately 10 minutes. When the cauliflower and zucchini are tender without being over-cooked, transfer them into a blender and blend until smooth.  Add more water or almond milk if you prefer it a bit thinner.
