Nena's Holiday Sea Bass with Basil Tomato Sauce

Try something new instead of turkey or ham for the holidays.  Fish is healthier and no holiday guilt!  Have a happy holiday & enjoy!

Ingredients - Basil sauce

  • 8 to 10 leaves of Italian Basil
  • Juice of 1 ½ lemon
  • 1 Garlic Clove
  • 1 teaspoons of grape seed oil.
  • 3 teaspoons of water (adjust as needed)
  • 1/8 Teaspoon Sea Salt

Preparation - Basil Sauce

  • Combine all the ingredients in a blender and blend until smooth.
  • Set aside

Ingredients - Sea Bass & Tomato Sauce

  • 4 (6-ounce) pieces wild-caught sea bass
  • 1/4 teaspoon of Himalayan salt
  • 1/2 teaspoon of lemon pepper spice
  • 3 garlic cloves, minced
  • 4 medium tomatoes, chopped
  • 2 shallots, sliced
  • 1 tablespoon fresh basil leaves, chopped
  • 1 teaspoon of grape seed oil + 2 teaspoon of oil for tomato sauce

Preparation 

  1. Wash the fish and pat dry, season both sides with salt and lemon pepper, and rub with oil.
  2. Heat a skillet to medium heat and cook the fish until golden brown, about 3 minutes per side.
  3. Transfer fish to a plate.
  4. In the same skillet over medium heat, add the 2 teaspoons of oil, chopped tomatoes, shallots, basil, minced garlic, salt to taste and simmer for 8 minutes.
  5. Add tomato sauce to the basil sauce prepared earlier.  It gives this recipe an amazing flavor.
  6. Lay the fish over a bed of arugula or the green of your choice and serve immediately.

Note

If you don't know, ask your butcher whether the sea bass is wild-caught or farm-raised. Make sure that it is always wild caught!
