Nena's Lentil Stew

Ingredients

  • 1 cup of pardina lentil
  • ½ cup of butternut squash cut iot small cubes
  • ½ cup of sweet potatoes cut into small cubes
  • ½ cup of asparagus cut into thing slice
  • 3 garlic cloves minced
  • 2 little branches of thyme
  • 2 bay leaves
  • 2 leaves of sage
  • ¼ of onion
  • 2 ½ cups of water
  • Salt to taste

Instructions
In a pot cook lentils with onion, thyme, garlic, and sage. Cook approximate for 10 minutes then add the rest of ingredients and cook for another 5 minutes or until all vegetables are tender but not overcooked.
Note: I like to use pardina lentils, since they will not disintegrate during cooking. They are great addition to salad. Lentils are 28% protein.

Lentils are the one leading the pack in the legume family when it comes to fiber. Lentils are rich in both the soluble and insoluble type. Soluble fiber forms a gel-like substance in the digestive tract that snares bile (which contains cholesterol) and carries it out of the body. Studies have shown that insoluble fiber not only helps to increase stool bulk and prevent constipation, but also helps prevent digestive disorders like irritable bowel syndrome and diverticulitis.
