Nena's Kale Salad with Butternut Squash

Ingredients

  • 1 bunch of kale
  • 1 lemon

  • 1 teaspoon of olive oil
  • 1 teaspoon of  Manuka honey ( or the honey of your choice)

  • Salt to taste
  • Pumpkin seeds

  • 1 cup of butternut squash (cooked)

Method

  • Prepare the butternut squash.  (Note: approximate 2 cups) Peeled and cut the butternut squash into cube then place in a skillet with the seasoning of your choice. I like fresh thyme, salt and my favor Mexican season to give it a great flavor. Cook over medium heat with cover and cook approximate 5 minutes oor until tender.  
  • Prepare the salad.  Wash kale really well, remove extra water. Cut kale into small pieces add the lemon juices and soak for about 2 hours.  Then add oil, salt and honey.  
  • Mix all together and add the butternut squash just before serving. If you wanted to be more festive, add dry cranberry and slice almond.
